Why Does Bread Bloat You?

You made yourself a sandwich at lunch. Nothing exotic, no onion, no dairy. By late afternoon your waistband is cutting into you and you are doing that thing where you stand up straighter and hold your stomach in. So you go looking for answers, and every result says gluten. Here's the thing: for most people with a sensitive gut, bread is not a gluten problem at all. It is a fructan problem, and that distinction changes what you actually do about it.

Gluten is a protein. This probably isn't about gluten.

Gluten is the stretchy protein that gives dough its chew. It is the real culprit in celiac disease, an autoimmune condition where the immune system reacts to it, and that is a completely different thing from what most bloated people are dealing with.

What is also in wheat, in much larger amounts, is a carbohydrate called fructans: short chains of fructose molecules linked end to end. Humans do not make the enzyme that snips those chains apart. Not some humans. None of us. Fructans pass through the small intestine untouched and arrive in the colon fully intact.

So when you cut out bread and feel better, you cut out both things at once and you blame the famous one. The quiet, dose-dependent one was usually doing the work.

Went gluten-free and got better — but not all the way?

This is one of the most common stories in IBS communities: someone cuts gluten on a hunch, feels noticeably better, and concludes gluten was the enemy — except things never fully settle. The improvement is real, and so is the loose end. Here is the likely resolution: a gluten-free diet removes wheat, rye, and barley, which quietly removes most of the fructans in a typical diet at the same time. If fructans were your real trigger, going gluten-free helps by accident — and only partially.

The catch is that fructans do not only live in gluten grains. Onion and garlic are the most concentrated everyday sources, and they are in nearly every sauce, stock, and seasoning — a gluten-free diet does not touch them. Some gluten-free breads even add chicory root fiber (inulin), a purer fructan than the wheat that was removed. And if lactose, excess fructose, or polyols are part of your picture, gluten has nothing to do with those at all.

So better-but-not-fixed is exactly what you would expect when the label is wrong but overlaps the right suspect. The way to find out properly is a structured elimination and reintroduction. What actually happens after the sandwich

Two things, at the same time. Fructans are osmotically active, which means they pull water into the gut as they travel. That is the sloshy, heavy, full-of-liquid feeling, and for some people it is looser stools too.

Then your colon bacteria arrive at the buffet. Fructans are exactly what they like to eat, and fermenting them produces gas, inside a stretch of gut already holding extra water. That combination is the pressure, the visible distension, the jeans that fit fine this morning.

It also explains why the timing confuses everyone. Food takes hours to reach the colon. The 11pm bloat is often the noon sandwich, not dinner, which is how people end up blaming the wrong meal for years.

Why sourdough behaves differently

Sourdough is not a flavor. It is a process. Real sourdough is raised by a live culture of wild yeast and lactic acid bacteria over many hours, and during that long slow proof those microbes eat the fructans. They ferment them in the bowl, so your colon bacteria do not get to ferment them in you. A properly slow-fermented loaf comes out with a fraction of the fructans the flour started with.

The catch is the label. Most supermarket "sourdough" is ordinary commercial-yeast bread with sourdough flavoring or a splash of vinegar, proofed in an hour or two. No long ferment, no fructan reduction. Look for a short ingredient list, flour and water and salt and starter, or a bakery that will tell you the proofing time.

Spelt sourdough is the double play. Spelt is an older wheat variety that carries fewer fructans to begin with, and the long ferment brings the number down further. It is still a wheat-family grain, so it is no help at all for celiac disease, but for a fructan-sensitive gut it is a very different starting point.

Portion is the whole game

Fructans work on a dose curve, not an on-off switch. There is a threshold your gut crosses or does not, and the size of what is on your plate decides it. One slice of wheat toast is a small dose. A two-slice sandwich doubles it. A restaurant bowl of wheat pasta is another league entirely, and it stacks with whatever the sauce brings, because onion and garlic are fructans too.

This is why "bread bloats me" and "bread was fine yesterday" can both be true for the same person in the same week. One slice with eggs at breakfast and a pasta bowl at 9pm are not the same experiment, even though your notes app records both as "had wheat."

It also means shrinking the portion is a genuine option, not a sad consolation prize. Half the sandwich. One slice instead of two. Pasta as the side dish rather than the whole meal.

How to actually find out

Test one variable at a time. Keep your usual bread and halve the portion for a few days, or hold the portion steady and switch to a genuinely slow-fermented sourdough or a rice-based loaf. Then watch the next 24 hours rather than the next hour, because that is when the colon does its part.

One thing worth knowing before you go gluten-free on a hunch: celiac testing only works while you are still eating gluten, so have that conversation with your doctor before you cut anything out. Anything severe or new deserves a proper look, not another experiment.
