No — lasagna is one of the hardest comfort classics to reconcile with a low-FODMAP approach, and this one follows the traditional recipe faithfully. Start with the structure: the pasta layers are semolina wheat, and in lasagna the noodles are not a garnish — they are the architecture of the whole dish, which makes one tray a full wheat-fructan serving several times over. The meat sauce then adds dried onions and garlic powder, two concentrated fructan sources that published FODMAP research flags even in small amounts, plus a little wheat flour as a thickener and a splash of soy sauce (that last one is minor — the wheat in brewed soy sauce is largely broken down). The dairy story is actually better than you would guess: dry-curd cottage cheese and part-skim mozzarella are among the lower-lactose cheeses, parmesan is aged and low in lactose, and only the nonfat milk in the cheese blend adds a small lactose note. Tomato puree at a single-serving portion is generally fine — it takes a much larger tomato dose to tip into excess fructose — and the beef is FODMAP-free protein. But none of that rescues the noodles-plus-onion-plus-garlic core of the dish. Who should skip it: anyone in elimination, and anyone with confirmed fructan sensitivity — which published FODMAP research suggests is the most common trigger group of all. Who might manage a portion: someone who has rechallenged both wheat and onion successfully and keeps to the single-serve tray. If that is not you yet, this is one to rebuild at home rather than reheat.
