No — organic doesn't change the FODMAP math: the shells are organic wheat flour, and the white-cheddar sauce leans on whey, so a prepared bowl carries both a fructan load and a lactose load. Fructans live in the flour itself, so organically grown wheat ferments exactly like conventional wheat, and a full serving of shells is far past the small wheat dose that tends to slip by. In the sauce packet, the actual dried cheddar is the friendly part — aged cheese retains very little lactose — but the whey listed right after it is where the milk sugar rides in, and the milk and butter you add on the stovetop stack more on top. Corn starch, salt, and lactic acid are all non-issues.
