The pasta is enriched wheat and durum flour, and a standard prepared cup delivers several times the small wheat portion that usually passes without trouble. The cheese sauce mix is built on whey, a milk powder that keeps most of its lactose, backed by milk protein concentrate — and the box directions then have you stir in fresh milk and butter, layering a second lactose source on top at prep time. The rest of the label is quiet: milkfat is essentially FODMAP-free, tapioca flour is a safe thickener, and the paprika, turmeric, and annatto colors are non-issues. They just can't offset the two headline triggers. If the blue box is non-negotiable, the gluten-free version of this same dinner swaps in rice-and-corn macaroni and removes the single biggest load, and preparing it with lactose-free milk trims most of what's left. As sold and as prepared per the box, though, this sits firmly in the high range.
