Mostly yes, as a drizzle — balsamic glaze is concentrated grape sugar, so serving size does all the work. A typical US bottle (Colavita Original Balsamic Glaze) lists cooked grape must, balsamic vinegar of Modena (wine vinegar, concentrated grape must, caramel color), wine vinegar, and guar and xanthan gums — no garlic, no onion, no high fructose corn syrup. But cooked grape must is grape juice reduced until it is syrup-thick, which concentrates fructose. Balsamic vinegar on its own is generally comfortable at around a tablespoon, with bigger pours tipping toward excess fructose — and a glaze is essentially balsamic that has been reduced further still, so the threshold arrives sooner. Some budget glazes also add glucose syrup or sugar; that matters less for FODMAPs, since glucose and sucrose are the tame sugars, but it signals a sweeter, heavier product. Practically, the thin zigzag you would put on a caprese salad or grilled peaches — a teaspoon or two — fits a low FODMAP approach fine. Pooling it by the tablespoon over roasted vegetables is where the concentrated grape fructose starts to add up. A splash of regular balsamic vinegar delivers the same brightness at a lower load.
