How much is OK?

Sorbitol
Sorbitol is the limiting factor and the window is small - roughly an eighth of a medium yellow peach. White-fleshed peaches are tighter still, around 18 g, and add fructans on top of the sorbitol, while clingstone varieties have no reliably small portion at all. Riper, softer fruit tends to be less forgiving, not more. Sorbitol is water-soluble, so canned peaches drained well and rinsed shed some of it into the liquid, but drained canned peach is not a licence for a full bowl.
