The long fermentation that lowers fructans has already happened inside the starter, so discard left unfed for a day or more carries much less fructan than the flour it was made from, while just-fed discard carries more. The catch is that discard pancakes, crackers and waffles add fresh unfermented wheat flour and go straight in the pan with no proving time, so the finished item still carries that added flour's fructans in full - swapping it for a gluten-free blend is what changes the answer.
