Becomes high FODMAP at
any discard recipe built on fresh wheat flour and cooked straight away
The long fermentation that lowers fructans has already happened inside the starter, so discard left unfed for a day or more carries much less fructan than the flour it was made from, while just-fed discard carries more. The catch is that discard pancakes, crackers and waffles add fresh unfermented wheat flour and go straight in the pan with no proving time, so the finished item still carries that added flour's fructans in full - swapping it for a gluten-free blend is what changes the answer.

Usually it's a portion difference, not a disagreement. This page scores sourdough discard at a serving of 1/4 cup (60 g) discard in a recipe made with gluten-free flour; at any discard recipe built on fresh wheat flour and cooked straight away it belongs in the high band. A source quoting the larger serve will call it high, and one quoting the smaller will call it low — the same food, measured at two different amounts.
